The second day of practice, the day the real practice begins. Yesterday, we were told that tomorrow at 7 in the morning if it was too late, we would be given a punishment
of collecting plastics that could be sold and had to collect 1 tresbag. Today we made croissant and won't forget to run if it failed.
In general, making croissants is the same as before but this time we used two different recipes. The steps are the same as in general
1. Prepare all ingredients except yeast (last)
2. Mix all ingredients with water, stir until evenly mixed then knead until smooth. Store at room temperature for 30 minutes and 15 minutes in a chiller.
3. Roll croissants fat
4. Roll until the air in the dough comes out then do a single fold and put it into the chiller for 15 minutes.
5. Roll to the desired thickness then add croissant fat then roll again and do a single fold, put it in the chiller for 15 minutes
6. Roll again and do a double fold then enter into the lahill chiller.
7. Finally do the single fold and save it again into the chiller
8. Roll up to the desired thickness then size as desired
9. Profing for 2 hours then bake for 30 minutes more with a temperature of 175 degrees Celsius.
Today, the croissants I made haven't been the way we wanted, so we had 3 more rounds.
