MID TEST ( SEMESTER TWO ) ENGLISH VERSION

Halo guys

             Today is day where me and my group do prepare for mid test tomorrow. Today my group prepare for menu rotasi 1.2 like macedonie of  vegetables with mayonaise, fillet dory of meuniere, potato au gratin, bechamel sauce, minestrone soup, choux ala crocoline and hard roll. Iam get section soup and the first iam prepare to  made tomato sauce like a whole tomato, tomato paste, salt and pepper. first iam boil whole tomato, second iam saute tomato paste, the last iam mix water with whole tomato and tomato paste aftet that boil and simmer. Which waiting tomato sauce, iam opreare vegetables for soup like a carrot ( small dice ), chop garlic, chop onion, cabbage and zucchini. After that my group made a stock ( white stock / chicken stock ). End then iam help my friend at the time restaurant open. After restaurant close we do general cleaning but day prepare my group there was  problem on made hard roll but my group made again and we back to home at 18.05 a.m. 
            The next day my group mid test. iam came in the kitchen at 06.50 and iam open kitchen and checking all chiller temperature. After that i take out all prepare yesterday and iam open red beans and mushroom canned. after that iam made a soup. The first saute garlic and onion until aroma is out and put carrot and basil and after that put the tomato sauce and stock and boil after that simmer. 
               At 10.15 a.m iam put cabbage, zucchini, red beans and mushroom and we boil again and simmer. At 10.30 a.m iam put the macaroni and simmer again until be thick and give seasoning. At 11.00 a.m we do explain in the restaurant but until at 12.00 a.m we not explain because in restaurant coming a gues and at 12.30 we open restaurand and then restaurant close we do general cleaning and back to home at 17.30.

* Procces how to made a minestrone soup 


1. saute garlic and onion until aroma is out 

 2. Put the carrot, tomato sauce, stock and basil after that boil and simmer


 3. Put the red beans, mushroom, zucchini, cabbage and give seasoning with salt and pepper after that put    the macaroni and simmer again until be thick and give seasoning again.

1.
